Adding ALDC in beer brewing is a new technology, which began in the 1990's. ALDC can decompose a-Acetolactic Acid into Acetoin directly and rapidly. Before ALDC was put into use, as we have all known that in brewing process, a-acetolactic acid will transform into diacetyl, and diacetyl is deoxidized to Acetoin by yeast itself. This course will last about 10 days.

Therefore, it will occupy the precious producing time and equipments. It is also a waste of water and electricity.
